Savory Lemon Herb Roasted Chicken 


Recipe


• 1 whole chicken (approximately 4-5 pounds)

• 2 lemons

• 4 cloves of garlic (minced)

• 2 tablespoons olive oil

• 1 teaspoon dried thyme

• 1 teaspoon dried rosemary

• 1 teaspoon paprika

• Salt and pepper to taste





1. Preheat the Oven:

 •  Preheat your oven to 375°F (190°C).


2. Prepare the Chicken:

   • Rinse the chicken inside and out under cold water and pat it dry with paper towels.

   • Place the chicken in a roasting pan.


3. Seasoning Mix:

   • In a small bowl, mix the minced garlic, olive oil, thyme, rosemary, paprika, salt, and pepper to create a flavorful herb mixture.


4. Lemon Infusion:

   • Roll one lemon on the countertop to release its juices, then cut it in half.

   • Take the other lemon and slice it into thin rounds.

   • Stuff the chicken cavity with lemon halves and a few lemon rounds.


5. Herb Rub:

   • Rub the herb mixture all over the chicken, ensuring an even coating.


6. Tie It Up:

   • If your chicken has legs that aren't trussed, tie them together with kitchen twine for more even cooking.


7. Bake Away:

   • Place the roasting pan in the preheated oven and roast the chicken for approximately 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).


8. Baste Occasionally:

   • Every 30 minutes, baste the chicken with the pan juices for a juicy and flavorful result.

   • Once cooked, let the chicken rest for 10-15 minutes before carving.
